Bacon Night

The wife was off with friends so I decided to use the package of bacon that had been glaring at me from inside the refrigerator. I had been planning this all day; ever since I had looked at my previous post Turkey Bacon Wrapped Chicken. All I could think was that I needed some more bacon in my life. I knew that for dinner I was going to make the Bacon Cheese Burger Rollup, that thing is always a hit, but I figured I’d try to make it a 3 course meal.. here’s what I came up with.

Appetizer: Atomic Buffalo Turds (ABT)

The Atomic Buffalo Turds are no invention of mine. For those of you who haven’t heard of them, I’ll give a quick explanation: it’s a gutted Jalapeno pepper (in this case, cut in half) filled with seasoned cream cheese and a little smokie, wrapped in bacon and normally smoked or grilled. I used this guy’s recipe: BBQAddicts.com. Quick overview of what I did:

-Slice jalapenos in half, remove seeds and fibrous innards

-Mix cream cheese with paprika and cayenne

-Fill jalapenos with cream cheese and a little smokie

-Wrap with slice of bacon

-Bake for 1 hour 15 minutes at 250 degrees F

-Hit with some sweet barbecue sauce and bake for an additional 15 minutes

They were awesome. So awesome, in fact, that I’m going to make them again soon.. Time to start planning.

Main Course: Bacon Cheese Burger Rollup

Next up was the bacon cheese burger rollup which I covered in my previous post so I won’t waste space here explaining how to make it. The one thing that I didn’t mention in the original recipe post is that I saved the bacon grease for the bacon brownies. We had discussed bacon brownies at work for a few weeks; mostly in jest. Here’s what went on:

Dessert: Bacon Brownies

I cooked 4 more slices of bacon and drained that grease into a cup for use with the bacon brownies. I made the brownies like you normally would, replacing the vegetable oil with the bacon drippings (instead of the required 2/3 cup of vegetable oil, I used 1/2 cup bacon grease). Once all was combined, I mixed in the 4 chopped up strips of bacon and baked the mix for 3 minutes longer than the longest suggested cooking time.

The brownies were good. Not much different than regular brownies except that they were a bit softer than regulars. It could’ve done without the pieces of bacon in it – you can’t really taste much bacon despite having used bacon grease for the fat and the bacon bits were kind of a let down. In the end, it was a bit too much extra work for getting brownies that didn’t make me want to rob a bacon bank but I’m glad I finally made them.

Now, I gotta find something else to baconate..
